The Revenge of Fruit

Taste “Best in Show” and “Platinum” highest award-winning wines of Decanter World Wine Awards 2022 at FHA/ProWine Singapore! Handpicked by Asia Regional Chair CH’NG Poh Tiong, the wines have been selected for their pristine purity of fruit; varietal integrity; and, resounding affinity with their site and terroir. Fruit is the very soul of wine, that which defines its existential purpose. Structure – whether from alcohol, acidity or/and tannins – can never be the reason for enjoying wine. Too many red wines are swamped with the taste of wood. Let’s return to the glory taste of fruit and bid goodbye to the taste of furniture.

The Art of Japanese Shochu

To fully understand and appreciate the art of Japanese Sochu. iichiko Shochu is the native spirit of Japan – a white spirit that’s incredibly rich in flavor, yet smooth and easy to drink with food. iichiko is made from 100% two-row barley, fermented with koji. Koji is the traditional secret behind Japanese foods famous for umami, like miso and soy sauce.

iichiko is a true expression of a pristine natural environment. iichiko is crafted in Oita Prefecture on Kyushu, Japan’s southernmost island – a region famous for its clean air, lush greenery, dense cedar forests, mountainous terrain, and geothermal springs. iichiko is the result of natural elements, cutting-edge technology and clean production techniques that ensure quality and consistency. This allows iichiko to be distilled only once, to preserve maximum flavor and character, but with an elegant, aromatic nose and a very smooth finish.

California VS The Rest of the World

The late Steven Spurrier organised a seminal blind tasting in 1976 pitching top names of French wine against some of the emerging leading names of California. To everyone’s surprise, the winners were mainly Californian wines. This taste-off was eventually labeled as “The Judgement of Paris” and established California’s reputation as a leading producer of fine wine. Subsequent repeats of the tasting confirmed California’s dominance. In a variation of that tasting, this masterclass will pitch California’s wines against wines from the rest of the world.

An Introduction to Blue Pyrenees Estate of Victoria Australia and its Méthode Traditionnelle wine

Blue Pyrenees — then called Chateau Remy — was established in Western Victoria during the early 1960s by the French company Remy Martin. Remy Martin is known as the most famous and expensive Cognac on market. Louis XIII was committed to discovering the wine potential of the world’s cool climate wine regions and in fact subsequently became the force behind Champagne Houses Krug and Charles Heidsieck. Remy Martin came across Victoria’s Pyrenees region in the early 1960s and realized its potential to produce a wide range of quality wines. Its soils are like those of Bordeaux, ample amounts of sunshine but this warmth moderated by altitude and southerly ocean winds all combined to convince Remy Martin to invest heavily in this region of Australia. So, in 1963, Blue Pyrenees Estate became the second vineyard to re-establish in Victoria, after all the other vineyards had disappeared earlier in the 1900s. Until today, Blue Pyrenees Estate is considered one of the best wineries for producing excellent quality premium red wines at great value as well as the best Australian sparkling wine using Methode Traditionnelle.

1. Introduction of the Pyrenees Region in Western Victoria of Australia where it was originally a gold mine, where we still can find some gold nuggets today.
2. Unique character of Australia Sparkling wine using Methode Traditionnelle production.
3. Time travel to compare the current release of Richardson Reserve’s range, 10 years old wine and 20 years old.
4. Elegancy of 20 years old Australian wine demonstrating the full potential of Pyrenees Region.
